When people visit distant lands, they bring their culture to the new land. This is how the fusion of cultures happens. Since Petpuja dot com is all about food, we will explore the fusion and differences between Indian and American cuisines. Indians are the biggest diaspora in the USA. Indian cuisine is known for its diverse and flavourful dishes. They use a wide range of spices, herbs, and vegetables. Popular dishes include butter chicken, biryani, samosas, and dal makhani. These are some of the most popular Indian dishes across the globe. Indian cooking also often involves traditional cooking techniques such as slow cooking and the use of a tandoor oven. Vegetarianism is widely practised in India, leading to a rich tradition of vegetarian dishes like chana masala, rajma-chawal, palak-paneer, aloo gobhi etc. Indian food can be enjoyed mild or spicy and is commonly served with rice or flatbread such as chapati, parantha or naan. I was driving through one of the by-lanes of South Bopal when this signage of " Purani Delhi " caught my attention. It was a new restaurant in this area (I live nearby) and there are not many restaurants in this side of the city. As a kid in the sixties, my first memory of sweet street food is kulfi or ice cream. As my childhood was spent on a university campus, no outside vendors were allowed on the campus. I remember how excited we (me and my sister) were when we used to go to the market or visit family friends outside campus. It was here when we saw these street vendors selling their sweet fare. The Kulfi vendor had a lottery system. there was a mould of a hand which the buyers (mostly children) had to press. On pressing the mould, a slip comes out with a number. If it comes with a number 3, the seller will give 3 kulfis for the price of one. Most of the time, it is one.
