1. Vegetable Momos

Ingredients:

  • 1 cup whole wheat flour

  • 1 cup finely chopped veggies (cabbage, carrot, beans)

  • 1 tsp ginger-garlic paste

  • Salt, pepper, soy sauce

Method:

  1. Knead the dough with wheat flour and water, rest for 20 minutes.

  2. Sauté veggies with ginger, soy sauce, salt, and pepper.

  3. Roll small circles of dough, fill them with the desired filling, and fold them into pleats.

  4. Steam for 10–12 minutes and serve hot, accompanied by chutney.


2. Patra 

Ingredients:

  • 6–8 colocasia leaves

  • 1 cup besan

  • 1 tsp red chilli powder, ½ tsp turmeric, salt, jaggery, tamarind pulp

Method:

  1. Make a thick paste with besan, spices, jaggery, and tamarind.

  2. Spread paste on colocasia leaves, layer 3–4, roll tightly.

  3. Steam for 25–30 minutes. Cool, slice, and serve.


3. Steamed Fish (Bhapa Maach)

Ingredients:

  • 4 fish fillets (bhetki/rohu)

  • 2 tbsp mustard paste

  • 2 tbsp curd, green chillies, salt, mustard oil

Method:

  1. Marinate fish with mustard paste, curd, and salt.

  2. Wrap each piece in a banana leaf and secure.

  3. Steam for 15–20 minutes till the fish is tender.


4. Besan Muthiya

Ingredients:

  • 1 cup besan

  • ½ cup grated bottle gourd/spinach

  • Salt, chilli powder, sesame seeds, hing

Method:

  1. Mix all ingredients, knead into a soft dough.

  2. Shape into cylindrical rolls.

  3. Steam for 20 minutes, cool slightly, slice, and enjoy.


5. Ragi Puttu

Ingredients:

  • 1 cup ragi flour

  • ½ cup grated coconut

  • 1 tsp salt, water

Method:

  1. Sprinkle water over ragi flour with salt until crumbly.

  2. Layer coconut and flour in the puttu maker.

  3. Steam for 7–10 minutes. Serve with banana or curry.


6. Handvo (Steamed Version)

Ingredients:

  • 1 cup rice + ½ cup chana dal (soaked, ground)

  • Grated bottle gourd, green chillies, ginger, curd

  • Salt, turmeric, chilli powder

Method:

  1. Mix batter with dal-rice paste, veggies, curd, and spices.

  2. Pour into a greased steaming plate.

  3. Steam 30 minutes until set. Cut into squares and serve.


7. Vegetable Rolls in Cabbage/Spinach Leaves

Ingredients:

  • Large spinach or cabbage leaves

  • 1 cup grated carrot, beans, capsicum

  • 1 tsp ginger-garlic paste, salt, pepper

Method:

  1. Blanch leaves in hot water.

  2. Place the vegetable filling inside and roll tightly.

  3. Steam for 10 minutes. Slice into rolls and serve.


8. Millet Idlis

Ingredients:

  • 1 cup foxtail/barnyard millet

  • ½ cup urad dal

  • Salt

Method:

  1. Soak millet and dal separately for 6 hours.

  2. Grind, mix, and ferment overnight.

  3. Pour into idli moulds and steam for 10 minutes.


9. Pesarattu Upma (Steamed Version)

Ingredients:

  • 1 cup green moong dal (soaked)

  • 2 green chillies, ginger, salt

  • Upma (rava cooked lightly)

Method:

  1. Grind moong dal with chillies, ginger, and salt.

  2. Spread batter in small bowls, fill with upma, and cover with batter.

  3. Steam for 20 minutes and serve with chutney.


10. Sweet Kozhukattai

Ingredients:

  • 1 cup rice flour

  • ½ cup grated coconut

  • ½ cup jaggery

  • Cardamom powder

Method:

  1. Heat coconut and jaggery till combined, add cardamom.

  2. Make dough with rice flour and hot water.

  3. Shape into small dumplings, fill with jaggery mix.

  4. Steam for 10–12 minutes.
