Shakarkandi ki Kheer - Sweet Potato Pudding, the Indian Superfood

Sweet potatoes is one of nature's unmatched sources of beta-carotene. Several  studies have shown the superior ability of sweet potatoes to raise the levels of vitamin A in blood.  In several studies from Africa, sweet potatoes were found to be a rich source of Vitamin A  and is supposed to meet over 90% of vitamin A needs from this single food alone.

It is helpful to include some fat in  sweet potato-containing meals  to enjoy the full beta-carotene benefits of this root vegetable. Recent research has shown that a minimum of 3-5 grams of fat per meal significantly increases the uptake of beta-carotene from sweet potatoes. 


Sweet potatoes pudding or kheer is an easy and tasty way to add this superfood into diet.

Ingredients: 

Sweet Potatoes - 250gm

Full Cream Milk : 1/2 lt.

Method:

1. Boil and peel the sweet potatoes.

2. Sieve them through the soup strainer to remove any threads from the sweet potatoes.

 3. Add milk and beat with beater to make it a smooth mixture.

4. let it simmer on  low heat for 5-10 minute or till the mixture thickens.

5. Add sugar to taste.

6. Garnish with rose petals,cinnamon powder or elaichi powder.

7. A thick rabadi like pudding is ready within minutes.
